  • 2 cups cooked and diced boneless, skinless chicken breasts
  • 1/2 cup bottled Thai peanut sauce
  • 1/2 cup shredded Wild Harvest Organic Whole Carrots
  • 1/4 cup chopped organic green onions
  • 1/4 cup chopped party peanuts
  • 2 tablespoons chopped Wild Harvest Organic Fresh Cilantro
  • 2 teaspoons toasted sesame seeds
  • 1-2 medium cucumbers sliced into 36 (1/4-inch thick) slices


In medium bowl, combine all ingredients except cucumber slices. Toss until well combined.

Top each cucumber slice with chicken mixture. Garnish with additional chopped peanuts or toasted sesame seeds.

May be prepared and assembled several hours ahead. Refrigerate, covered, until ready to serve.
