with Apples & Cranberries

  • 1 cup Essential Everyday White Quinoa
  • 1 5 ounce package Essential Everyday Sweetened Dried Cranberries
  • 4 teaspoons curry powder divided
  • 1/4 cup Essential Everyday Nonfat Plain Greek Yogurt
  • 1 tablespoon Essential Everyday Extra Virgin Olive Oil
  • 1 tablespoon fresh squeezed lemon juice
  • 1 1/2 teaspoons Essential Everyday Honey
  • 1 large crisp apple diced
  • 1/2 cup diced red onion
  • 1/2 cup Essential Everyday Walnut Halves & Pieces toasted
  • 1/2 cup reduced fat feta cheese crumbles
  • 2 tablespoons fresh Italian parsley chopped


In medium saucepan with cover, prepare quinoa according to package directions adding cranberries and 3 teaspoons curry powder with quinoa. Cool completely.

In large mixing bowl, combine yogurt, oil, lemon juice and remaining 1 teaspoon curry powder; salt and pepper to taste.

3. Add cooled quinoa and remaining ingredients to yogurt mixture. Toss until well combined; salt and pepper to taste.
