Curry Quinoa Salad


  • In medium saucepan with cover, prepare quinoa according to package directions adding cranberries and 3 teaspoons curry powder with quinoa. Cool completely.
  • In large mixing bowl, combine yogurt, oil, lemon juice and remaining 1 teaspoon curry powder; salt and pepper to taste.
  • 3. Add cooled quinoa and remaining ingredients to yogurt mixture. Toss until well combined; salt and pepper to taste.
