Grilled Goat Cheese Crostini


  • In medium bowl, combine tomatoes, Parmesan cheese, olives, onion, basil, 1 tablespoon oil, vinegar and garlic; salt and pepper to taste.
  • Prepare grill to medium heat. Lightly brush bread slices with olive oil. Pierce garlic clove with fork; set aside.
  • Place bread on grill; grill, turning once, until toasted (about 2 minutes). Remove from grill and rub tops of bread with garlic clove.
  • Spread with goat cheese and top with bruschetta.
