GRILLED GOAT CHEESE CROSTINI

with Tomato & Olive Bruschetta

INGREDIENTS

  • 3 cups Culinary Circle Chopped Tomatoes
  • 1/2 cup Culinary Circle Shredded Parmesan Cheese
  • 1/3 cup chopped pitted Kalamata olives
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh basil leaves
  • - Culinary Circle Extra Virgin Olive Oil divided
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon minced garlic
  • 12 (1/2-inch) slices rustic Italian style artisan bread (about 1 loaf)
  • 1 large garlic cloves
  • 1 4 ounce package Culinary Circle Soft Goat Cheese

DIRECTIONS

In medium bowl, combine tomatoes, Parmesan cheese, olives, onion, basil, 1 tablespoon oil, vinegar and garlic; salt and pepper to taste.

Prepare grill to medium heat. Lightly brush bread slices with olive oil. Pierce garlic clove with fork; set aside.

Place bread on grill; grill, turning once, until toasted (about 2 minutes). Remove from grill and rub tops of bread with garlic clove.

Spread with goat cheese and top with bruschetta.
