Coconut Basmati Rice


  • In medium saucepan with lid, combine rice, coconut milk, 1 cup water, Garam Masala and salt.
  • Cover and bring to a boil; reduce heat and simmer until liquid is absorbed, stirring occasionally (about 20 minutes).
  • Remove from heat; stir in apricots, toasted coconut, cashews, currents and green onions.
