  • 1 cup Essential Everyday Basmati Rice
  • 1 13.5 ounce can Essential Everyday Light Coconut Milk
  • 1 tablespoon Garam Masala spice blend
  • 1 teaspoon Essential Everyday Salt
  • 1/2 cup dried apricots
  • 1/2 cup Essential Everyday Sweetened Coconut Flakes toasted
  • 1/2 cup Essential Everyday Cashew Halves & Pieces
  • 1/4 cup dried currents
  • 1/4 cup sliced green onions


In medium saucepan with lid, combine rice, coconut milk, 1 cup water, Garam Masala and salt.

Cover and bring to a boil; reduce heat and simmer until liquid is absorbed, stirring occasionally (about 20 minutes).

Remove from heat; stir in apricots, toasted coconut, cashews, currents and green onions.
