BANANA WHEAT MUFFINS

INGREDIENTS

  • 1 1/3 cups broken Essential Everyday Bite Size Frosted Shredded Wheat Cereal
  • 1 3/4 cups Essential Everyday All-purpose Flour
  • 1 teaspoon Essential Everyday Baking Soda
  • 1/2 teaspoon Essential Everyday Salt
  • 1/2 cup Essential Everyday Butter softened
  • 1/2 cup Essential Everyday Granulated Sugar
  • 1/2 cup firmly packed Essential Everyday Light Brown Sugar
  • 2 large eggs
  • 1 teaspoon Essential Everyday Pure Vanilla Extract
  • 1 cup mashed ripe bananas
  • 1/2 cup Essential Everyday Chopped Walnuts (optional)

DIRECTIONS

In medium mixing bowl, combine shredded wheat, flour, soda and salt; set aside.

In large mixing bowl, cream butter and sugars together with an electric mixer. Add eggs, vanilla and bananas; continue mixing until well combined. Slowly add in flour mixture. Add walnuts, if desired.

Divide into a 1 (12 count) greased or paper lined muffin pan. Bake in a preheated 375°F oven 20-25 minutes or until a knife inserted in the center comes out clean.

Remove from pan and place on a cooling rack.
